The sulfur in science pack is a change done in the base game.
In theory, yes, turning on the ore is a solution.
But, assuming you don't have that turned on, You can clean the sour gas to get sulfur and use the PG for something else, a fuel source.
You can burn it in "Oil burning" boilers, or turn it into fuel blocks... or probably get more out of it turning it into hydrogen first then using it to upgrade coal into fuel blocks.

Nothing wrong with that choice, but... Oil is technically infinite, it just slows down as you use it. and if the slower flow isn't enough, you expand and either create more oil processing plants, or import the oil.

and why is there too much ore on the map no matter what i chose it is like they cater to people who wnat to have ot leave the start areaw but then job is done

I changed to the new ore spawning mechanic in the base game. it's hard to get it right.
it spawns way too many gems...

I'm using RSO with region size set to 21 in my current game, and ores are quite rare. Maybe use RSO with a setting that works for you in terms of resource scarcity. 21 might be a bit high depending how lucky you get with generation of needed ores.

Although personally I don't use RSO (I need to know how things behave normally, in case I need to fix it), I would recommend it to anyone else.
