Eventually you reach a point where your Mining Productivity research is so high that belts feeding chests and inserters just won't do the job anymore. When it's just so much more practical to mine directly into a wagon. How would one be able to hook these stations up to LTN? I'm assuming I'd just set the provider threshold to zero, but then how would LTN know what the station was providing if there are no chests to supply a signal? Could I simply just add a "1 copper ore" signal to the constant combinator and call it a day?

Yes, the LTN stop doesn't know where the signals come from. You can connect it to a constant combinator and say "2000000 copper ore" is available. It does have to think there is at least one train's worth there, or multiple train's worth if you want multiple deliveries to be scheduled at once.
