i loaded a savegame and was walking through my base as i saw this expressbelt where the items disappeared from.

After replacing this special part of the belt, it worked again.

Can you open your inventory and see if maybe you're picking up the items?
Also have you tried it without the mods to see if maybe one of them might be picking up/deleting the items?

Looks like one of the mods is causing this issue, because it works normally in vanilla. It also looks like the copper cables are just disappearing, and not going into the assembler, because the assembler never runs in your video.
